Double Fermenting with Freshly Made Juice vs Bottled Juice

This is just a note for now, as I have not done any direct experiments. I used a 48 hour double ferment time frame on juice right out of our juicer because I established that time frame while double fermenting with an organic juice from the store. There was less sweetness that I was trying to capture, so the next time I double ferment (should be this weekend) I will try a shorter cycle and see if something like 24 hours might be more accurate for the double ferment and the taste I am going for.
